The baking pellets produced by Zibo Tengxiang, also known as steam stones, pie/tart pan weights, are used in baking to make tarts and pies. They utilize their own weight to press down the tart and pie crusts, preventing unevenness or puffing up. They are also commonly used to generate steam when making European-style bread.

Why is steam used in making European bread?
The purpose of spraying steam is to prevent the bread from setting too quickly (though not all breads require this). Most European-style breads need a sufficiently moist baking environment with high temperature.
The center temperature of a proofed dough is around 30°C, which is much lower than the temperature inside the oven. At this point, after steam is introduced, the dough will rapidly absorb heat and expand like magic. Therefore, the few minutes when steam is applied are crucial for expansion and setting. The dough absorbs the steam, preventing the surface from setting too quickly. Instead, it begins to gelatinize, forming a soft crust that allows the interior of the bread to extend and expand as much as possible, resulting in a soft internal texture and a hard, crispy exterior.

Can you spray water on the surface of the proofed dough before baking instead?
The effect of steam inside the oven is completely different from directly spraying water on the bread. Spraying water on the bread cannot replace high-temperature steam.

How to use baking pellets to generate steam?
Place an empty baking tray on the bottom rack of the oven and fill it with baking stones. Preheat the oven together. Before baking, place the tray with the dough into the oven, then spray water from a kettle onto the stones and quickly close the oven door to create steam.

Precautions:
1. The product may accumulate some dust during transportation; simply rinse it clean.
2. The heavy stones may have small black spots, which are part of the stone's natural material.
3. A few stones may break or rub against each other during transportation, producing a small amount of dust.
